It’s a transliteration of a Hebrew word. I doubt that there is any one correct way of spelling it.

Either spelling is OK, because it's just a transliteration from the Hebrew. It is pronounced with the guttural "Chuh" sound. Personally, I use Chanukah.

And may I wish a happy Chanukah to all who observe it!
