Rise in production comes just as exports are hit by strong dollar; can you eat three pounds more?

America has built up a glut of cheese so big that every person in the country would need to eat an extra 3 pounds this year to work it off.

My dogs will gladly eat more cheese. The show they put on getting rid of it should be good too.

My Grandparents would get commodity cheese, milk, powdered eggs, and horsemeat. Its amazing what a person can do with these products and a few vegetables. The horsemeat was pretty good fried or used like hamburger.

The then-wife and I would have fondue at least twice a month, using a pound plus each time.

(And then she would complain about the sodium intake.)

Granted, we would usually use imported Gruyere, Fontina, Jarlsberg, Emmental, etc. Basically, whatever was cheapest and available.

Cheddar was just too overpowering as THE meal alone.

No problem with it, or Feta, on other stuff, or in salads.

The USDA or whoever would drop off 10 lb blocks of American cheese at my grandparent’s senior apt. complex for anyone who wanted it.

They spread the surplus wide in the early '70s. My mother had just retired from teaching and it was made available to either retired teachers or any retired person and she picked up a box. I came around to visit and it was really good cheese.

I paid $2765 total for my ‘64 ‘Stang rag top w/4 on the floor. What a beautiful car! It was that nice red!

My boss got a red and white 64 convertible for our ‘errand’ car. It was only a six but lots of fun.

I've been wanting to make a Di Buffali pizza.

The cheese is pretty expensive, relatively speaking - but I have heard that it's head & shoulders above regular mozza.

I went to 4% full fat last year, instead of the normal 2% stuff.

There is a taste difference.

I have extremely fond memories of late night pizza in an alley by a Sicilian pizzeria, complete with the little round table and tablecloth, and a bottle of Glicine (Corvo). Margherita pizza with mozzarella di buffalo.

Oh my. That was some good eats.

One night, we didn’t polish off the Glicine and gave it to the pizzeria owner, who stood in the doorway, folded his apron down below his waist somehow, and drank the wine straight out of the bottle.

Great times.
