I guess I'm still perplexed that people actually engage in conversation with a Starbucks server.

There's always been a line the few times I've been in there. My conversation has been limited to ordering and paying, and a mutual "thank you." before I move on.

I suppose chatting with a waitress in a diner might make some sense, but standing in line... holding up other customers? Who does that?
