Why eat beef? Try bison!

I bought a package, seasoned the patties and cooked them on my GF grill. ....Bison has soooo little fat that it’s lacking any flavor or juciness; just like lamb chops. ...It’s the veins of fat in beef that ooze into the meat when grilling that gives it great flavor, IMO.
Hirsch’s is great when I feel like splurging a bit.
