What’s the Deal with… Butter in Coffee

People have taken to putting butter in their coffee.

The practice is polarizing—it sounds awesome to some, disgusting to others—but really, it’s not about how the mixture tastes. “Clarified butter is a great source of energy, satiates you: I get the draw,” coffee writer Oliver Strand told us on Twitter. “But it’s more about diet than flavor.”

Let’s discuss.

Where It Comes From: Putting butter in morning tea has long been a “thing” in Tibet. “The heart and soul of Tibet” is butter tea, chef Vikas Khanna told us. (Khanna’s cookbook, Return to the Rivers: Recipes and Memories of the Himalayan River Valleys, was nominated for a James Beard Award this year.)

It’s almost exactly what it sounds like: tea, brewed normally, and then served with a float of yak butter and Himalayan salt. “It is hard to drink initially—it’s so strong!—but it’s the best thing Tibet taught me.”

It was Dave Asprey, though, who most recently imported the idea to States, switching the tea to coffee, adding some other ingredients, and branding it Bulletproof Coffee. Then came the attention from Paleo diet experts and followers of the Traditional Foods movement.

I tried it for a few days. Using the recommended grass fed type butter.
It tastes good... very creamy.

BUT....it was a big pain in the butt to have to whip it up every morning. Using a blender at 6 am is not a good idea for me.
I went back to my heavy cream.

Oh, forgot to add....it does a very good job curbing the appetite. I wasn’t hungry until about 3 or 4 in the afternoon.
So if your trying to lose a few pounds by curbing your appetite, this works.

Last note...I also put a tablespoon of coconut oil in with the butter.
If you add the coconut oil you definitely have to blend it up in a blender. But it does taste good.

I use creamer and honey as my sweetener. The honey curbs my appetite and clears my sinuses.

Like my women (I always say that)

Speaking of which....there is a Louisiana creole after dinner drink called CafeBrulot which uses orange peels...cloves....sugar...coffee....brandy or cointreau.....and on occasion butter in some recipes

Very fancy....hard to make Commanders Palace does

I’ve never tried honey in coffee. I’ll try it this morning with the cream.

I drank Yak butter tea in Tibet. It did seem to help with the high-altitude hiking. The taste was bareable, in the context of the trip.

Back home I drink coffee. Black. Strong. Occasionally as a desert I’ll have an espresso with sugar. I like the coffee-flavored sugar granules at the bottom of the cup.

I don’t think I’ll ever try butter in coffee.

Coffee is served very strong, black and unadulterated with any kind of sweetener or flavoring. That’s coffee. Other preparations might be enjoyed by some but they’re not coffee.

Bingo!

I make my coffee so strong and black, anyone who comes to visit automatically knows they have to dilute it.

I drink it as is, about every third or fourth cup I might add some Irish Cream...

Heavy cream is how you get butter...should do about the same thing for you, just a little less concentrated.

I’ve always used actual butter...even way back when margarine was the favorite. I do not eat fake food. I said then ‘if God made it, I’ll eat it.’ If man makes it ...you can bet there is something in there we should not be ingesting.

Clarified butter, “ghee”, is very different in texture, consistency and taste from whole butter. Heat up butter to the melting point, just before boiling, pour off the lighter, clear liquid which will be about half. That’s “ghee”.

Whole butter in coffee would be gross!

Love bulletproof coffee! I use about a tablespoon of coconut oil and a teaspoon of butter. A few seconds on the Vitamix and it’s frothy and creamy.

Er, to me that would be the same thing as having Corn flakes or Cheerios and not adding a bit of sugar to it. It would taste like cardboard. In the case of unadulterated coffee it’d make for a bitter drink that would make the experience unpleasant. I prefer pleasant:) Speaking of beverages I will never understand why people drink beer. I think it’s the nastiest thing, aside from the maggots I just saw this dude eat on Marooned.

Agreed. If you can stand a spoon up in it, even better.
