These ducks rescued in a hoarding case had never swam in the wet stuff before, so when they were led to their first pond, all didn't go quite as planned.

We had a lovely early Valentine’s dinner out last night, and I had duck. Seriously.

As other posters have noted, duck (particularly wild duck) has a much, much higher proportion of dark meat.

From a cooking standpoint, trying to cook duck "like" chicken is probably a losing proposition. Duck has a much higher fat/meat ratio than chicken, and the *usual* methods of cooking duck respect this difference. As an example, the Latin dish pollo asado. If the same cut of duck were cooked in this way (baked, then broiled), the dish would almost surely end up very, very greasy.

Of course, just as you can roast a chicken, you can roast a duck. Different temps, different distance from flame, longer cooking time for duck.

Shouldn't really be a problem for you. I just looked up -- with ONE internet search -- over 200 dishes featuring cooked duck. Search, pick your favourite, and enjoy, m'FRiend!

When I had my farm, someone wanted to get rid of her 4 adult geese. I went and picked them up for the farm and she gave me the blue kiddy pool that the geese used for drinking and would go into the pool. I had a good size pond on the farm and they wouldn't go near it. I kept moving the kiddy pool closer to the pond and they wouldn't go near the pond, even when the kiddy pool was right next to it...finally decided this is ridiculous and using a rake to keep one of the geese from fleeing, forced it into the pond. Good golly he was squawking all the time, until he found out he could swim. (I kept runing around the pond and with the rake wouldn't let him out,) That became their place to hang out and all of the 4 would swim in it and at night bedded down on the far side of the pond. Great watchdogs, if any critter passed by, they would honk up a storm and then the dog would start barking, she knew those geese were on guard.

They also became attack geese, LOL a friend visited the farm and we were not home. They told me that those geese attached the tires of their car. Would even attack anyone walking the farm if they saw them...

Why is it that when I look at these things I think of them trussed up in the freezer?

Here in Pennsylvania, roast pork and sauerkraut is THE traditional meal on New Years Day. So you just substitute roast duck for the pork, and voila!

The skin of the duck with plum sauce served locally here is delightfully slightly crispy. I think they might deep fry it briefly before serving. Fantastic!

Not too different here in the South for New Years Day. Black eyed peas, collard greens ( a cabbage relative) and pork. Some warm homemade corn bread on the side finishes it out.

I agree, the duck skin is always best slightly crispy.

They also became attack geese

I had Muskovy ducks a few years back and one was insane. I called him my attack duck. He ran two Jehovah's witnesses clear back across the pond dam.

I did take Les Brown down to the creek and he likes water if it’s not larger than he is. Little Orphan Annie is four months old and she’s afraid of water so she has a little water bowl. I’ll give her a plastic shoebox again and see if she’s ready to dunk. She’s pretty big but when ducks are afraid of somethin’ it takes patience to earn their trust and to get them to get in the freakin’ water.

Muscovy are a lot like geese. Yes, an attack Muscovy duck can happen. I don’t get attacked unless I shove anything towards my pet duck or if I wear a color sweat pants he doesn’t like. Everyone’s a fashion critic.

I rescue ducks and teach them how to not get hit by cars. I can’t eat duck since I began hangin’ around w/them after the BP oil spill when they moved further south to our complex. They’re like dogs. Seriously. They have different personalities. Helping ducks has interfered with everything else I do in life but no regrets.

It is taking forever to buffer. I guess I”ll watch the video tomorrow. My duck is at you tube right now for Valentine’s Day. If anyone wants to see my ginormous Muscovy duck who lives in the house, here’s the link. Next.

I hatched and raised 3 mallards one summer after a raccoon tore up their nest and frightened their mother away. That was an experience. Yes, they do have different personalities.

I had one that hatched a week after the first 2 and the first 2 bullied him mercilessly. He didn’t even develop his male colors until after the first 2 (male & female) had flown away. When he was all by himself here, he developed beautiful male plumage. He actually came back here the following spring, but he didn’t stay because we have no natural water. He had a different colored bill and responded to “Ducker, ducker” so I knew it was him.

They really are. I wish I'd known you before I had to let Psycho Duck go. He went to a rescue way out in the country. The other duck I regrettably kept. Every day for two weeks he sat for hours at the very spot where Psycho Duck was captured and taken away. It must have become obvious his buddy wasn't coming back, and he left too. I don't know where he went, but I wish I'd have let him go with his friend. One of the most sad animal things I've ever seen.

They care so much about their duck friends, cats, dogs and their humans. Ducks run up to me and I don't feed them after they reach a certain age. I tell them to eat dirt, leaves, bugs and run the hose so they can find what to eat. People feeding them bread is like welfare. Anyway, they run up to me just because they know me.

I'm sorry duck number two flew away. Chances are, there will be more ducks. Try to get some more to keep around. Avian vets could have given psycho duck something to calm him down. They also get parasites and that's an easy treatment inexpensive.

Duck Manifesto

Birds by nature will pick on the perceived weaker duck but since this is in the suburbs, neighbors are around to tell our duck friends to knock it off. Ducklings are clueless without their mama ducks. They run around peeping until a predator spots them or they get hit in traffic. The hawks were relentless but they’ve moved on. We can’t stop the cranes or the herons but the mom ducks are avoiding big ponds until the kids are big enough not to be picked off by larger tropical birds.

All my duck photos are at facebook. If you ever go over there, message me and I’ll send you my fb name and I’ll be glad to friend you so you can see my current duck and foster duck who’s been here since she was a hatchling. Her mom and seven siblings all got run over in a quiet street by an island of Fla shrubbery. Her other sibling brother turned out to be a preemie so he was only at our house for three days and he didn’t make it. She was all alone but with amazing calm and coping skills. In this case, the runt who lagged behind ends up being the lone survivor. She was brought over here.

I usually catch loners w/a butterfly net from Dollar Tree. Bigger ducklings I herd onto my back porch and shut the screen door. That’s how I have Les Brown for three years. We trapped him on my neighbor’s back porch. Les was running around by himself for a month after his entire family was run over. He stood out cuz he was all brown with no Muscovy two tone going on.

My three year old muscovy is on you tube. Anyway, Saturday a.m. at about 8:30. He’s seen his friends outside and is making his duck sound to greet them (window’s closed tho.)

I need to relocate the orphan girl Annie but she might be devastated without my other duck, two cats and me. I want to make sure the placement is right. Meanwhile, I have farm chores around here so everyone stays in good health. (Avoiding breathing in grain, water w/old corn in it or poop.)

My pet duck only gets natural water if it rains and I put a bucket outside. I won’t scoop up rain water when the backyard floods cuz I don’t need him to get parasites or something. Otherwise, he has fluoridated water and his beak has no cavities.

Seen and handled real sad situations where nobody else could help cuz they were too freaked out. While calming neighbors down acting like it’s not horrific I think about the situations later. It’s been pretty nightmarish but then I see the flip side when the ducks make it to adulthood and go fishing in the creek for minnows, when they run towards me or wave goodbye or bring their new kids to my place or roll their rotten eggs down my sidewalk (which I could live without.) Summer’s the worst time to have a nest and worst place is by a downspout on the sunny side.
