I had a can last week that was marked with an expiration date of june, 1994. They were excellent. Packed in fragrant virgin Olive oil.

I’m more of an anchovy man myself:

Saute diced garlic in olive oil until light brown in a deep pan.
Add two cans anchovies AND all oil in cans. Stir occasionally to break up filets.

Meanwhile:

Cook angel hair pasta until al dente. Drain.

Add pasta to garlic/anchovie pan.

Toss.

(Add 1/3 cup capers or so, to taste).

Serve.

Add grated parm or red pepper flakes, to taste.

Mangia!

Have you ever seen how they make catsup?

They squeege the tomatoes across the slab after the trucks have driven through them, and everything goes into the vat.

Well...you said you had some post-dated cans.

I believe I threw some of those *long-keys* out of my mom's pantry when I cleaned out her house. If I had known, I woulda saved them for ya. :P

Maybe they glowed.

All that happens to the sardines is the flesh gets darker, much like anchovies, from absorbing the salt.

Beware of sardines packed in tomato sauce. Eat those first if you have them.

During TS Irene my cellar was flooded for close to two weeks. Of all the canned foods under water for that duration, those sardine cans were the only cans which were damaged.

Sounds like some sort of electrolysis going on there. What with the acid solution on the inside and the more brackish/alkaline solution on the outside.

I'll bet if you'd tested one with a voltmeter, you'd have gotten a small reading. Like a mini Sardine battery.

Dang, that pic you posted of spaghetti & sardines looks delish!

On a side note, yesterday we did our weekly grocery shopping & I specifically picked up a couple of cans of sardines packed with green chili’s due to your thread.
