Yes, in mustard. I might have a couple cans at home, that I always forget about. Do you think they are good for YEARS? Or not worth the risk?

I agree. My father who died many, many years ago used to eat a tin of sardines every single night with Ritz crackers before he went to bed. The smell just did me in.

I did not know smelt were from Michigan, as were my parents. My mom, as a single mother in about 1966 with 5 kids born between Oct 1954 and Oct 1960... she would buy these huge bags of frozen smelt for just pennies, and then bread and fry them. She could stretch a food dollar SO FAR. That was back in the days before food stamps and when most people actually cooked.

I like these:

I used to eat them all the time in college, great for taking camping and hiking. They were 3 cans for a buck then; the last time I looked in the store they were $1.89/can.

Sardines are great, as long as the skins are intact. Can’t see any reason to bother eating them otherwise, since all of the food value is in the skin and the fats they contain.

I’m more of an anchovy man myself:
Saute diced garlic in olive oil until light brown in a deep pan.
Add two cans anchovies AND all oil in cans. Stir occasionally to break up filets.
Meanwhile:
Cook angel hair pasta until al dente. Drain.
Add pasta to garlic/anchovie pan.
Toss.
(Add 1/3 cup capers or so, to taste).
Serve.
Add grated parm or red pepper flakes, to taste.
Mangia!

Have you ever seen how they make catsup?
They squeege the tomatoes across the slab after the trucks have driven through them, and everything goes into the vat.
