There is a theory held by the head of nutrition at Duke University and many others. He believes that Diabetes of both types is just your body having a problem with a very unnatural high carb diet.

Until man was able to grind flour, carbs really existed in abundance in the late summer and fall. Your body responded by saving fat. And that fat helped with winter. But from late fall to summer you were back to meat almost exclusively.

Even before the last 75 years, sugar was rare and expensive. And flour was course and harder to digest. Fruit and vegetables were only available in season. And they were often smaller and had less sugar in them.

Our bodies were never made to eat this many carbs. And we were never made to eat carbs this much of the year. And so we get depression and diabetes. Even alcoholism is part of it. They are all conditions related to the fact that our diet is far to rich in carbs.

Now some people can take it. And a great deal of exercise helps. But as we get older we lose our ability to burn it off. And slowly we start to see symptoms of too many carbs. Normally its just extra weight. Then joints and your back start to hurt. Your blood work-up goes out of whack. Your triglycerides and blood sugar rise. And if you go on a diet you react more strongly to alcohol.

Our medical system would rather treat the symptoms. Our government would rather we eat carbs. Because our country makes so many carbs. Its all good for business. But if you want to feel better. Just cut flour and sweeteners of all types out of your diet. Look at the label and try to stay below 20 carbs a day for a while. That means your eating all the Meat, eggs, cheese and green leafy vegetables you want. You will lose weight. Dramatically at first. Then a little more slowly until you hit your natural healthy weight. Then you can eat some fruit. And more vegetables and nuts as long as you stay at that weight. Watch out for anything called sauce, its normally not good, like ketchup or BBQ sauce. Rubs, mustard and spices are fine. You will feel better and stay thinner. And your doctor will be amazed and accuse you of exercising.

When you go low carb, beware. The food industry throws some things at you to sell more crap. First High protein is not low carb. And even though you have a high protein diet when you are on a low carb diet. Its not the same. High protein bars and shakes often have lots of sugar. Besides high protein, beware of low fat, natural or all natural, and any sweeteners even the no calorie sweeteners.

Some say you can eat virtually any one ingredient product. Like corn on the cob. Naturally corn is not good. But if you eat it on the cob you are working at it and eating most of the fiber that corn products take out. When corn is in season and on the cob go ahead, eat one. But I think this theory breaks down with raisins. Those are nothing but sugar.

Just remember on a low carb diet you can have all the fat and protein you want. Thats ok as long as your low carb. Just watch the carbs and you will be ok.

Oh one more thing. Stay away from anyone who tells you everything is fine in moderation. That is crap. Moderation includes a huge amount of carbs. Moderation includes a few cigarettes a day along with just one small bag of potato chips, one twinkie, a bowl of frosted flakes, and a cookie. Moderation is a great way for the food industry to sneak anything into your diet. I am sure the moderation devil used that line when he told eve to have just one bight of the apple.

When someone says just eat in moderation realize that the person is either dumb or evil. Once the words come out of their mouth, I suggest you have 10 seconds to decide which you are dealing with.

Low carb eating is getting much easier. Take unsweetened tea in a bottle. I had a very hard time finding it anywhere. The tea company said nobody would buy it. But I started to find it in the grocery 5 years ago. I had to go to certain stores as others did not stock it at all. But now its not only in every grocery store, I now find it in gas stations, fast food places, hotels, and movie theaters. Its really almost everywhere sugar drinks exist.

The same is true for grilled chicken. Almost every fast food place has it even if its not on the menu. When I walk into a KFC I ask for it if its not on the menu. So far they have always had it. Besides low carb, its gluten free, and good for diabetics, so most fast food places have it.

Bread is the trick. And breads close family, chips and crackers, that cause a bit of an issue. I wish there was a low carb alternative. Some places will give you a hamburger on a lettuce leaf but thats a mess. Someone should invent a better option.

My wife uses sliced cucumbers instead of crackers. I am not a fan of cucumbers so I eat my cheese without a cracker. And my cousin will order an egg Mcmuffin and eat just the insides. I actually take off the top muffin part without the cheese and eat the rest. Yes its a half English muffin, but I don’t have them very often and I don’t cheat anywhere else.

Yes, I know about the 'no white foods' thing. Although I don't eat near the starches I used to they're still there.
